As autumn advances over Menorca, the light changes. The sun becomes more golden and the breeze brings with it new aromas. It is at this precise moment when at Finca Formet we stop the clock to honor one of our most sacred rituals: the olive harvest.
More than agricultural work, the harvest is a tribute to the land and to patience. It is the culmination of a year of sustainable care under the Mediterranean sun, where our olive trees become the undisputed protagonists of our landscape.
Arbequina and Picual: A marriage of character and subtlety
The secret of our Oli d’Oliva Verge Extra lies in the wise combination of two exceptional varieties that coexist in our fields: Arbequina and Picual.

Arbequina: Small but powerful, it provides subtlety. It is responsible for the fruity and sweet notes, evoking aromas of almond and green apple. It is the caress on the palate.

Picual: Provides body and stability. With its high content of polyphenols (natural antioxidants), it gives our oil its character, its light intensity and that elegant spiciness that denotes freshness and health.
Together, they create a balanced blend that captures the wild and refined essence of Menorca.
The art of harvesting: Respect and tradition
At Finca Formet, excellence is non-negotiable.
The process is meticulous and respectful of the tree:
Shaking and Vibration: We use methods that minimize damage to the olive tree. As can be seen in our field work, we use mechanical rods that shake the branches with precision, raining the olives onto the canopies.
Reception in Manto: The olives never touch the ground directly. They fall on breathable nets (canvas) stretched under the canopy of the tree, ensuring that the fruit remains clean and healthy until it is processed.
From the field to the press: Time is money. The olives are immediately transferred for milling.
